Gourmet coffee is grown on medium- to high-altitude mountainsides, under the shade of taller trees that provide the idea combination of sun and shadow to grow large, dark-red 'grapes.' Cooperative members at Las Colinas – located in the northwest department of Sonsonate near the border with Guatemala – tend the coffee plants year-round – clearing brush underneath and around the spindly bushes, applying organic fertilizer and natural methods for controlling harmful pests and pruning.
