A group of Las Colinas cooperative members and community workers pause during the harvest season while waiting for a truck that will take their bags and baskets of coffee down the mountain to a processing station. The Las Colinas cooperative is one of the few who have the machinery to remove the pulp from the husk of the beans, which are then dried.
